Coconut Margarita of the Party Gods

"You put the lime in the coconut..." Dr. Swami has a coconut prescription that will have you feeling better in no time. This intoxicating island cocktail with its mixture of lime and coconut is an ambrosia sweet enough to peel the parrots right off your shirt.

Ingredients

  1. Combine ingredients in a blender; purée until smooth.
  2. Divide evenly between prepared glasses, and serve immediately.

For a Festive Rim
You'll need, 1 C. sweetened shredded coconut and 1/2 t salt

  1. Preheat oven to 350 degrees. Toss coconut with the salt and spread on baking sheet. Toast in oven, stirring frequently, until golden brown, 8 - 10 minutes. Let cool, then crush with your hands until crumbly.
  2. Pour 2 tablespoons lime juice into a shallow dish. Place coconut mixture in another dish. Dip rims of two cocktail glasses in lime juice, then in coconut mixture, coating well.
